Soils play a crucial role in human nutrition since they are the primary source of essential nutrients through our plant products. The presence and availability of nutrients are directly related to the physicochemical characteristics of the soil. Globally, deficiencies in iodine, zinc, selenium, and iron are recognized as public health problems affecting a substantial percentage of the population. However, there is limited availability of studies that address and describe the concentration and availability of these elements in water, soils, and food. Surprisingly, even in our country, we lack basic studies such as regional mapping of the presence and bioavailability of iodine, selenium, zinc, and iron in agricultural soils and water. This lack of information poses a challenge to understanding the nutritional situation and adequately addressing these deficiencies in our population, implementing prevention measures through biofortification, and improving the quality of agricultural soils.
